I am going to be sharing with you a simple yet delicious recipe. The name of the delicious dish is eggplant and avocado salad. Ingredients: 2 eggplants 2 avocados garlic 1 teaspoon coconut oil salt and pepper optional walnuts Procedure: Cut the eggplants into a medium size cubes. Then add the coconut oil in a frying pan. Insert the eggplant cubes in the pan and stir them until they get a golden brown colour. Then add the garlic, salt and pepper stir it and remove it from fire. Meanwhile cut the avocado into small cubes and insert them in a salad bowl with the walnuts. When the eggplants cool down add them into the salad bowl add the dressing and enjoy!
