Today I decided to give myself a break from writing about mental health and I am going to be sharing with you my secret obsession! I am going to be sharing with you a simple yet delicious recipe. The name of the delicious dish is eggplant and avocado salad.
Ingredients:
2 eggplants
2 avocados
garlic
1 teaspoon coconut oil
salt and pepper
optional walnuts
Procedure:
Salad dressing
1 tablespoon olive oil
2 tablespoons of balsamic vinegard
1 tablespoon honey / if you are vegan you can add brown sugar instead
salt and paper
Add the olive oil, balsamic vinegar, honey or brown sugar, salt and pepper stir it together and add it in your salad. Keep in mind that the dressing is for 2 servings so add to your salad as much as you prefere.

Procedure:
Cut the eggplants into a medium size cubes. Then add the coconut oil in a frying pan. Insert the eggplant cubes in the pan and stir them until they get a golden brown colour. Then add the garlic, salt and pepper stir it and remove it from fire. Meanwhile cut the avocado into small cubes and insert them in a salad bowl with the walnuts. When the eggplants cool down add them into the salad bowl add the dressing and enjoy!
