193 calories cottage pie!

Hello friends,

I know it's been awhile since my last blog. I haven't been doing very well. My anxiety pretty much took over and it got me to a very bad place right now in my life. However in my moments of clarity one of the few things I enjoy is cooking. I love cooking for my friends and family. One thing that I enjoy the most is eating healthy food that will make my tummy full and will keep me contend until my next meal. So I slowly started changing the way I cook and only by that I manage to maintain a healthy lifestyle without being deprived of any category of food. So I am sharing with you my favorite recipe of the month which is cottage pie.  The recipe can be split into 7  decent size portion and I alway love to escort my food with a large Greek salad on the side. 


Cottage pie

3 large potatoes
2 cups of boiled cauliflower
1 egg

For the filling

250 grams of 5% fat beef mince meat
1 diced onion
4 diced carrots
150 grams diced mushrooms
150 diced fresh tomatoes
1 beef stock
salt and pepper according to your preference
half teaspoon mint

First I boil the cauliflower and potatoes until they get to the point that they are really soft. Then insert the cauliflower and potatoes in a big bowl and mash them until they have a nice smooth texture. After that insert the egg and stir it, this will give a nice fluffy texture to your mash and don't worry the egg won't show all. In the meantime you are preparing your filling. First spray a medium size fry pan with some frylight and add the mince meat until it gets brown. Then add the diced onion, carrots, mushrooms and tomatoes and leave it for 5 minutes and then add 1 beef stock and half a mug of water stir it and close the pan with a lit and wait approximately 25 minutes until the ingredients are cooked. As soon as the filling is cooked add the mint and salt and pepper accordingly to your preference. I personally like it a bit spicy so I add quite a bit of pepper. Now that you have everything ready take a deep tray and insert the filling and add the mash on top then leave it in the oven until the mash gets to a golden brown colour!  

If you are like me that some days you feel like cooking and some days is just a struggle you can save the cottage pie into small one use oven trays and froze it for later!
