Sweet and sour pork without frying / 261 calories per serving/ short life update

I hope you doing well!  If you are here just for the recipe only, then please scroll further down. I know is been a long time since my last post! Don't worry I am doing great. As most of you may know I use my blogs as a hobby and as way to express myself. If you are with me from the beginning then you know I struggle with depression and PTSD but I am doing a lot better now and becoming more active as a member in society. Since I have somehow recovered from my struggles with mental illness I am now in the process of catching up with the world around me. Which it is a challenge and this is why I am not keeping up to my blogging schedule. Most probably I will not keep to my blog schedule!

 Now let's move on to the main theme of my blog which is the sweet and sour pork recipe. After recovering with depression I had to teach myself how to eat healthy again so I downloaded an application to help me count my calories. Important note to that is to recognize the good calories (fruits and vegetables) and the bad calories (high fat sugary foods). It is the only reason I urge someone to check the calories intake as you may use foods that are not necessary good for you without knowing that they are bad for you. However after a week or two of healthy eating you tend to miss some sugary foods in your life but you don't really want to ruin all the hard work you did just for a meal. This is how I ended up with this recipe as I replaced some ingredients to make the meal a bit more healthier without making the food taste bland! I hope you enjoy this recipe as much as I did and looking forward for your feedback!

Important note: The below recipe is for 2 servings

Ingredients: 

1 teaspoon of coconut oil
1 cup of chopped carrots 
100 g of lean diced pork meat
1 chicken cube stock 
3 tablespoons rice vinegar
3 tablespoons of gold brown sugar (instead of a regular sugar I use Sukrin which is a sugar alternative and it actually doesn't have many calories for example 2 table spoons of sukrin brown sugar is around 4 calories. I know I was surprised to see that too)
0.5 cup of fresh pineapple cut in pieces 
0.5 cup of fresh pineapple juice 
1 large onion
2 spring onions
1.5 cup of red pepper
1.5 cup of yellow pepper
1 teaspoon of worcestershire sauce
1 tablespoon soya sauce
3 pieces of  fresh crushed garlic 
1 tablespoon of paprika 
 salt 

Process:

Add the coconut oil in a non stick fry pan and cook the pork until it gets slightly cooked. Then move the pork into an oven pan and bake it for 15 or until cooked. Add in the frying pan the garlic, paprika, worcestershire sauce, soya sauce and stir them together until they mix together. Don't stir too long. Then add the spring onions, onion, red/yellow peppers and carrots stir them and cook them for approximately 1 minutes. Add the pineapple juice, fresh pineapple pieces, rice vinegar, chicken stock, brown sugar and salt. Stir and wait until the sauce is reduce. Add the pork pieces into the sauce and stir them together. Then wait  approximately 15 minutes or until the sauce reduce and become slightly thick. Finally is ready to serve! 

Note: In case you would like the sauce to be as thick as a restaurant you will need to add corn flour and is approximately 4 tablespoons of corn flour. If you going to use corn flour I would recommend to use the 2 tablespoons with the porc. The remaining 2 dissolve them in water and add it in the sauce later on. I didn't use corn flour for my recipe as I personally prefer to consume my carbohydrates in rice instead.But if you would like to make it more as a restaurant quality feel free to use corn flour!
